4 Ingredients Vegan Brownies
Ingredients
- 2 cups of sweet potato
- 1/2 cup of cocoa powder
- 1 cup of almond butter
- 1/2 cup of maple syrup or agave
Directions
1. Cook the sweet potato. You can bake it in the oven, but I put mine in the microwave. I just pressed the button on the microwave that said potato. Usually it’s a couple minutes depending on the microwave, you really can’t mess it up just make sure not to overcook it. Don't forget to poke a couple holes in the potato before you stick it in the microwave or oven.
2. Take the skin off the sweet potato, and if you are impatient like me, be careful its hot. Otherwise wait until it cools off. Measure 2 cups of potato and mash in a bowl. Make sure there are no chunks. The next couple steps I mixed by hand, but it’s significantly easier with an immersion blender.
3. Add almond butter, mix until consistency and color is uniform. The mixture will be pretty thick at this point.
4. Add agave or maple syrup, whichever you choose. This cuts the thickness and makes it easier to stir. If you like your brownies sweeter, add more. You can do a taste test to determine your preferred level of sweetness.
5. Add cocoa powder and mix evenly
6. Oil a standard sized brownie pan approximately 9 x 9 x 2 inches and transfer mixture from bowl into pan. Spread mix evenly across pan.
7. Preheat oven to 375 and bake for 30 minutes, or until you can pierce the center with a knife and it comes out clean
8. Let them cool before cutting. The end result should be brownies with a fudge-like constancy. Goes well with strawberries or blackberries. Enjoy!
